Not sure if the residue is 'food safe', but it's going to be a little gritty and wouldn't want it in/on my food. Would recommend removing grates, whether on the lawn or a utility tub, clean the grates and rinse with a garden hose.

Q: Will these clean rust off a Blackstone griddle?

I do not have a Blackstone griddle so I can't answer definitively but they should work. They are abrasive without being overly hard. I clean my baking steel with them and they remove burned on food without scratching the surface. I prefer them to steel wool. I would not use them on a non-stick surface. They are fine on my seasoned steel and on my barbeque grill. I reoil but do not reseason. Because they are a bit soft they do wear out.
